  • 1000 grams filet mignon (sliced in half)
  • 1 teaspoon coarse salt (for soaking)
  • 100 milliliters olive brine (for soaking)
  • 100 grams bacon strips (to wrap the filet)
  • 1 tablespoon olive oil (for searing)

    Cooking Steps
  1. Prepare the Filet

    Slice the filet mignon in half without separating it. In a bowl, combine the olive brine and coarse salt, soaking the filet for about 20 minutes.

  2. Sear the Meat

    Remove the filet, heat the olive oil in a skillet, and sear the meat until golden brown on the outside.

  3. Wrap with Bacon

    Take out the filet, insert the bacon strips between the two halves, tie it with cotton twine, wrap the piece of meat in aluminum foil, and place it on the grill (or skewer) over low heat for 50 minutes.

  4. Final Browning

    Remove the foil and allow to brown for about 10 minutes. Serve with white rice and vinaigrette.
