Ingredients for Banoffee Pie
    For the crust
  • 100 grams Clarified butter or coconut butter or lard
  • 200 grams Demerara sugar
  • 1 unit Egg
  • 1 teaspoon Vanilla extract
  • 190 grams Rice flour or oat flour
  • 20 grams Chickpea flour
  • 65 grams Almond flour or another nut flour
  • 1 pinch Salt
  • as needed Water
Instructions
    Prepare the crust
  1. Making the crust

    Combine all dry ingredients and the clarified butter at room temperature in a bowl, mixing well with your hands until it resembles a crumbly texture. Add the egg and, if necessary, add water until the dough is workable and does not stick to your hands. Roll out the dough in the bottom of a pie dish, making sure to press it up along the sides. Finally, poke holes with a fork in the dough. Bake in a preheated oven at 350°F for about 10 minutes.
