  • 120 milliliters water
  • 165 grams demerara sugar

  • 10 grams gelatin sheets or powdered gelatin
  • 1 teaspoon vanilla extract
  • 25 grams rice flour
  • 300 grams heavy cream
  • 15 grams oat flour
  • to taste units sugar (optional)
  • 20 grams tapioca flour
  • 25 grams potato starch
  • 25 grams nut flour
  • 20 grams golden flaxseed meal
  • 200 grams cherries
  • 50 grams oil or other fat

    Cake Preparation
  1. Make the Cake Layers

    Beat the eggs with the fat, sugar, and vinegar. Add the cocoa, flours, and plant-based milk, mix, and add the baking powder and baking soda. Pour the batter into three 6-inch round cake pans. In one removable-bottom pan, place a layer of batter. Poke it with a fork and moisten with cherry syrup. Add a layer of marshmallow and distribute the chopped cherries. Repeat this process with the other cake layers. Bake in a preheated oven at 350°F for about 20 minutes. Let cool and rest for about 1 hour.

    Finally, remove the cake from the pan and cover with whipped cream, decorating as desired. For the whipped cream: Beat the heavy cream with demerara sugar until it reaches whipped cream consistency (optional). For the marshmallow: Soak the gelatin and whip the egg whites. Heat the sugar with water until slightly reduced. While whipping the egg whites, add this hot syrup. Once the mixture cools, add the hydrated gelatin.
