Ingredients for Braised Oxtail
    Main Ingredients
  • 1000 grams oxtail (washed and drained)
  • 1 unit medium onion (chopped)
  • 1 tablespoon garlic salt
  • 25 milliliters cachaça (or any Brazilian spirit)
  • 1 unit lemon juice (freshly squeezed)
  • 1 pinch saffron
  • 2 tablespoons lard (or cooking oil)
  • 1 unit bay leaf
  • to taste unit parsley (freshly chopped)
  • to taste unit scallions (sliced)
  • to taste unit pepper (freshly ground)
  • 500 grams watercress leaves (washed)

    Preparation Steps
  1. Cooking the Oxtail

    Wash and drain the oxtail and reserve it covered with water. Add lemon juice and cachaça, and bring to a boil. Drain and set aside. In a hot pot, add the lard, garlic salt, chopped onion, and lastly, saffron. Add the oxtail, stirring well to ensure even coloring. Add the bay leaf and gradually add water until a thick broth is formed and the meat is cooked. Adjust the seasoning. Finish cooking by adding layers of raw watercress leaves, previously washed in cold water. Add parsley, pepper, and scallions, stir well, and it's ready! Serve with cornmeal mush (angu).

    The broth should be abundant and thick.
