Ingredients for Brazilian Egg Stew
    Main Ingredients
  • 3 units eggs
  • 1 teaspoon olive oil
  • 3 drops dende oil
  • ½ unit medium onion, finely chopped
  • 2 units large Italian tomatoes, chopped
  • 1 teaspoon fresh cilantro, finely chopped
  • 1 teaspoon fresh parsley, finely chopped
  • ½ teaspoon lemon juice
  • to taste unit salt and finely chopped chili pepper or green pepper

  1. Prepare the Stew

    In a large skillet, add both types of oil, heat over high heat, add the onion and sauté quickly, without letting it brown. Add the tomatoes, cilantro, parsley, lemon juice, season with salt and pepper to taste, stir well and cook, mixing occasionally, until it starts to boil. Carefully crack the eggs over the mixture, being careful not to break the yolks, lower the heat, cover the skillet and cook, occasionally spooning the cooking liquid over the eggs, until they reach the desired doneness (soft or hard). Turn off the heat and serve.
