  • 3 units eggs
  • 150 grams brown sugar (for the brownie batter)
  • 150 grams 70% dark chocolate (melted)
  • 90 grams oil (for baking)
  • 70 grams rice flour (gluten-free option)
  • 100 grams egg whites (for marshmallow)
  • 90 grams brown sugar (for marshmallow)
  • 120 milliliters water
  • 10 grams gelatin sheets or powdered gelatin (for marshmallow texture)

    Preparation Steps
  1. Bake the Brownie Layers

    Melt the chocolate with the oil and set aside. In a mixing bowl, beat the eggs with the brown sugar. Add the melted chocolate and mix. Finally, add the rice flour. Divide the batter into 3 portions or as preferred. Pour the batter into a baking pan lined with parchment paper. Bake in a preheated oven at 220°C for about 10 minutes.

  2. Prepare the Marshmallow

    For the marshmallow, hydrate the gelatin and whip the egg whites until stiff. In a saucepan, combine the brown sugar with the water and cook until it reduces slightly. While beating the egg whites, add this hot syrup. Once the cream cools down, add the hydrated gelatin.

  3. Assemble the Cake

    For assembly, in a pan, add a layer of brownie and then add the marshmallow. Repeat. Let it cool in the refrigerator for a few hours before decorating.
