Ingredients for Carrot Waffle
    Main Ingredients
  • 1/2 unit medium carrot
  • 1 unit pasture-raised egg
  • 2 tablespoons demerara sugar
  • 5 drops vanilla essence
  • 6 units almonds (chopped)
  • 2 tablespoons amaranth flakes
  • 2 tablespoons green banana flour
  • 1 tablespoon green banana biomass
  • 5 tablespoons homemade coconut milk
  • 1 teaspoon ghee
  • 1 teaspoon baking powder
  • 2 units bananas, sliced (for topping)
  • to taste unit honey (for serving)
  • to taste unit almond flakes (for topping)
  • to taste unit goji berries (for topping)
  • to taste unit chia seeds (for topping)

    Preparation
  1. Blend Ingredients

    In a blender, blend the carrot, egg, sugar, and vanilla essence. Add the almonds, amaranth, banana flour, coconut milk, ghee, and green banana biomass, and blend again.

  3. Cook the Waffles

    Add the baking powder and pulse just to mix well. Pour into a waffle maker greased with coconut oil and follow the manufacturer's instructions for time and temperature. If making in pancake form, place in a frying pan greased with coconut oil and cover. Flip to brown the other side.

  4. Serving
  5. Add Toppings

    Top with bananas, honey, almond flakes, goji berries, and chia seeds. Serve hot.
