Ingredients for Cauliflower Pizza
    Dough Ingredients
  • 1 unit egg
  • 1 cup cooked cauliflower
  • 1 cup almond flour
  • 1 tablespoon olive oil
  • to taste unit salt
  • to taste unit seasonings
  • Topping Ingredients
  • to taste unit grilled eggplant, sliced
  • to taste unit tomato sauce
  • to taste unit bufala mozzarella
  • to taste unit green leaves (kale, spinach, arugula, etc.)
  • to taste unit sliced tomato
  • to taste unit fig pieces (optional)
Instructions
    Make the Pizza
  1. Prepare the Dough

    Blend all the dough ingredients in a blender or mixer until you get a smooth mixture. Pour the dough into a greased baking pan and bake in a preheated oven at 350-400°F for 15-20 minutes until golden brown. Remove from the oven and set aside.

  2. Make the Sauce
  3. Prepare the Tomato Sauce

    In a pan, sauté an onion with a drizzle of olive oil. Add diced tomatoes, cover, and stir occasionally until softened. Add salt and seasonings, blending the sauce if desired.

  4. Assemble the Pizza
  5. Assemble and Bake

    Pour the sauce over the pizza, add eggplant slices, bufala mozzarella, sliced tomatoes, and return to the oven for another 15 minutes, or until the cheese melts. Remove and top with greens and figs.
