Ingredients for Chicken Coxinha
    Dough
  • 1 unit large potato (cooked and mashed)
  • 1 tablespoon salt
  • ½ tablespoon oil
  • 2.75 cups water
  • 1 cup corn flour (pre-cooked)
  • 1.25 cups cornstarch
  • Filling
  • 200 grams boneless skinless chicken breast (cooked and shredded)
  • ½ teaspoon salt
  • ½ unit small onion, chopped
  • 1 unit small tomato (chopped)
  • 1.5 tablespoons parsley (chopped)
  • ½ teaspoon paprika
  • 1 unit large garlic clove (minced)
  • 1 tablespoon tomato sauce
  • 200 milliliters filtered water
  • Coating
  • ½ cup manioc flour (seasoned)
  • 3 cups oil (for frying)

    For the filling, cook the chicken breast in a pressure cooker for about 15 minutes. Once cooked, shred the chicken and sauté it in a pan with oil, onion, garlic, and tomato. Add paprika, salt, tomato sauce, and finally parsley. Set the sautéed chicken aside.

    In a pressure cooker, cook the potato for about 8 minutes. Once cooked, mash the potato and set aside. In a pot, combine oil, water, and salt and bring to a boil. When it starts boiling, add the sifted pre-cooked corn flour and cornstarch, stirring until the dough separates from the bottom of the pot.

    Turn off the heat and add the mashed potato, mixing until a smooth dough forms. Allow the dough to cool, then make small balls. Create a hole in each ball with your fingers and fill with the filling. Close the hole and shape it into the coxinha. Coat the coxinhas in filtered water and seasoned manioc flour, then fry in hot oil.
