Ingredients for Chickpea Salad
    Main Ingredients
  • 300 grams Cooked chickpeas
  • 2 units Carrots (Peeled and cut into sticks)
  • 1 unit Onion (Cut into quarters)
  • 1 unit Lemon (Cut into wedges)
  • to taste Olive oil
  • 1 teaspoon Paprika
  • ½ teaspoon Ground cinnamon
  • ½ teaspoon Turmeric
  • to taste Salt
  • to taste Black pepper

    Preparation Steps
  1. Combine Ingredients

    Begin by preheating the oven to 425°F. In a large bowl, mix the paprika, cinnamon, turmeric, and olive oil. Peel the carrots and cut them into sticks lengthwise. Cut the onion into quarters.

  2. Roast Vegetables

    Transfer the vegetables to the bowl with the seasonings and mix. Spread them on a baking sheet, drizzle with more olive oil, add salt and pepper, and roast in the oven for 30 minutes. Remove from the oven and let cool.

  3. Prepare Lemon and Combine

    Cut the lemon into wedges and sauté in a bit of olive oil for 3 minutes on each side. Drain the chickpeas and combine them with the vegetables. Serve with the grilled lemons.
