  • 40 grams amaranth flour or quinoa or brown rice flour
  • 40 grams potato starch or cornstarch
  • 33 grams golden flaxseed meal
  • 33 grams almond flour or other nut flour
  • 60 milliliters plant-based milk
  • 100 grams chocolate sprinkles or cocoa nibs coated in flour
  • 1 tablespoon baking powder

  1. Prepare the Batter

    Beat the eggs with the clarified butter and demerara sugar until you obtain a fluffy cream. Add the dry ingredients and the plant-based milk, and mix until well combined. Add the baking powder. Finally, fold in the chocolate sprinkles gently.
