  • 1 unit turkey (Make sure it's defrosted.)
  • to taste unit salt
  • 120 milliliters olive oil (Extra virgin if possible.)
  • 2 units large onions, chopped
  • 4 units carrots, chopped
  • 4 units celery stalks, chopped
  • 2 units fresh thyme sprigs
  • 1 unit bay leaf
  • 120 milliliters balsamic vinegar (For a rich flavor.)

    Preparation Steps
  1. Prepare the Turkey

    Remove the skin from the turkey. Rub the turkey all over, inside and out, with salt. Place it in a pot and cover with cold water. Refrigerate for 12 hours.

  2. Roasting Instructions

    Preheat the oven to 350°F. Remove the turkey from the refrigerator, discard the brine, and rinse the turkey well under running water. Brush it with olive oil. Fill the cavity of the bird with one onion, half of the carrots, half of the celery, one sprig of thyme, and the bay leaf. Spread the remaining vegetables and thyme around the turkey in the roasting pan and drizzle with balsamic vinegar. Roast uncovered for about four hours. If necessary, turn it on its side.
