Ingredients for Cornmeal Pastry
    Dough
  • 1000 grams cornmeal
  • 2 liters water
  • 3 tablespoons salt
  • 1/3 cups tapioca starch
  • 5 tablespoons oil
  • Filling
  • 1000 grams ground beef
  • 300 grams onion, chopped
  • as needed unit oil for sautéing
  • to taste unit parsley and green onion, chopped
  • to taste unit seasoning

    Preparation
  1. Making the Dough

    Sift the cornmeal. Bring the water to a boil with the salt and oil. When boiling, add the cornmeal and mix vigorously to avoid lumps. Let it cook. Pour into a bowl and add the tapioca starch, kneading while still warm. Allow to cool while mixing to avoid crust formation. Once cooled, knead well. Roll out the dough, fill it, and shape the pastries.

    For the filling, sauté the onion and seasoning in oil. Add the ground beef, mixing until the water evaporates. Check the seasoning. Add the chopped parsley and green onion, mix well, and turn off the heat. Let it cool and use to fill the pastries.

    Fry in hot oil without thawing.
