Ingredients for Country Chicken Stew
    Main Ingredients
  • 1 unit country chicken
  • 250 grams corn grits
  • 1 unit large onion
  • 5 units garlic cloves
  • 2 tablespoons oil
  • 1 bunch collard greens
  • 1.5 liters boiling water
  • to taste unit parsley
  • to taste unit green onions
  • to taste unit seasoning
  • to taste unit pepper
Instructions
    Cooking Steps
  1. Prepare the chicken and vegetables

    Cut the chicken into pieces and season with the seasoning and pepper to taste. In a clay pot, sauté the chopped onion and garlic.

  2. Cook the chicken

    If the chicken is fatty, fry the fat to make cracklings, replacing the oil with the rendered fat to sauté the onion and garlic. Once golden, partially fry the chicken pieces until lightly browned. Add the boiling water and cover to cook the chicken until tender.

  3. Add grits and greens

    Once cooked, add the corn grits and torn collard greens to cook quickly in the broth.

  4. Serve the stew

    When serving, garnish with chopped parsley and green onions, along with the chicken cracklings if desired.
