Ingredients for Cracker Cookies
    For the Cookies
  • 1 cup golden flaxseeds
  • 1 tablespoon hulled sesame seeds
  • 1 tablespoon unhulled sesame seeds
  • 1 tablespoon psyllium husk
  • 4 tablespoons almond flour or almond pulp
  • 1 tablespoon coconut oil or olive oil
  • ½ teaspoon salt
  • 240 milliliters warm water
  • For the Ricotta
  • 100 grams almond pulp
  • 1 bunch green onion (chopped)
  • 1 tablespoon extra virgin olive oil
  • ½ unit juice of half a lemon
  • to taste unit salt
  • to taste unit seasonings

  1. Mix and Bake

    In a bowl, mix all the dry ingredients. Add the warm water and stir well. Pour the dough into a baking sheet lined with parchment paper. Spread it out to be very thin. Bake in a preheated oven at 320°F for about 10 minutes.

    For the ricotta, mix in a bowl the almond pulp, water as needed, olive oil, and the juice of half a lemon. Add the chopped green onion, salt, and seasonings.
