Ingredients for Eggplant Boats with Grains
    Main Ingredients
  • 1 cup Mixed grains
  • 2 tablespoons Olive oil
  • 1 unit Eggplant
  • 0.5 unit Onion (medium) ((about 70g))
  • 1 unit Garlic clove ((medium, about 3g))
  • 2 tablespoons Parsley
  • 5 units Cherry tomatoes ((about 10g))

    Preparation Steps
  1. Prepare the Eggplant

    Cut the eggplant in half and scoop out the flesh, setting it aside. Season the hollowed eggplant halves with salt, pepper, and olive oil. Bake in the oven at 180°C for 15 minutes.

  2. Cook the Filling

    While the eggplant is baking, chop the reserved flesh into small cubes. Sauté the chopped onion and garlic in the remaining olive oil until soft. Add the diced eggplant and cook for an additional 3 minutes. Remove from heat.

  3. Combine and Serve

    Mix in the cooked grains, parsley, and cherry tomatoes with the sautéed mixture. Fill the baked eggplant halves with this grain salad and serve immediately.
