Preparing the Cookies

  1. Make the dough

    In a saucepan, combine the butter, brown sugar, and honey. Heat over low until a syrup forms, stirring with a spoon. In a bowl, sift together the all-purpose flour, ground ginger, and baking soda. Mix well and add the melted syrup along with the beaten egg. Stir until a uniform dough forms. Wrap the dough in plastic wrap. Refrigerate for at least 12 hours.

    The dough will be quite soft, but it will firm up in the refrigerator.

Baking the Cookies

  1. Bake and cool

    Preheat the oven to 350°F (180°C). On a floured surface, roll out the dough to a thickness of 0.5 cm. Cut out cookies using various shapes or the rim of a glass for round cookies. Grease two or more large baking sheets with butter and dust with flour. Arrange the cookies on the sheets, leaving a 2 cm margin between them. Place in the preheated oven and bake for 10 minutes. Remove from the oven and let cool. Once the cookies firm up, use a spatula to transfer them.

    If desired, decorate the cookies with icing.
