Ingredients for Healthy Chicken Coxinha
    Main Ingredients
  • 4 tablespoons Olive oil (Extra virgin preferred)
  • 315 grams Chicken broth
  • 200 grams Brown rice flour
  • 4 tablespoons Oat flour
  • 100 grams Potato starch
  • 200 grams Shredded cooked chicken breast
  • 7 teaspoons Flaxseeds (Ground)
  • 3 tablespoons Tomato sauce
Instructions
    Preparation Steps
  1. Step 1

Preheat the oven to 350°F (180°C).

  2. Step 2

Heat 2 tablespoons of olive oil and the chicken broth in a pot over low heat for 3 minutes.

  3. Step 3

Gradually add the brown rice flour and sifted potato starch, stirring continuously until a smooth dough forms. If needed, add more flour until it no longer sticks to your hands.

    Ensure a smooth texture.
  4. Step 4

    Allow the dough to cool.

  5. Step 5

Grind the flaxseeds and mix them into the cooled dough. Set aside.

  6. Step 6

Season the shredded chicken and add the tomato sauce to create the filling.

    Adjust seasoning to taste.
  7. Step 7

Take a small portion of the dough, flatten it in your palm, and place some of the filling inside.

  8. Step 8

Shape the coxinhas, coat them in oat flour, and place them in the preheated oven for 20 to 25 minutes, or in an air fryer.

  9. Optional Step 9

Brush the coxinhas with extra virgin olive oil before coating them.
