Ingredients for Heart of Palm Noodles
    Main Ingredients
  • 12 oz fresh shredded heart of palm ((bought as “hearts of palm pasta” in the U.S.))
  • 1 cup sweet grape tomatoes
  • 3 tablespoons olive oil
  • 2 sprigs fresh basil
  • ¼ cup chopped walnuts (Toast for extra crunch if desired.)

  • to taste unit freshly ground black pepper

    Preparation Steps
  1. Prepare the Ingredients

    Wash and dry the tomatoes and basil. Slice the tomatoes in half and set aside the basil leaves.

  2. Toast the Walnuts

    If desired, toast the chopped walnuts in a skillet over medium heat for a few minutes until fragrant, then spread them on a plate to cool for extra crunch.

  3. Cook the Heart of Palm

    Bring a small pot of water to a boil over high heat. Once boiling, add 2 teaspoons of salt and cook the heart of palm for just 30 seconds. Remove with a slotted spoon and transfer to a bowl, reserving 1 cup of the cooking water.

  4. Sauté the Tomatoes

    Heat a large skillet over medium heat. Once warm, drizzle in the olive oil and sauté the tomatoes for 2 minutes, stirring occasionally to maintain their shape.

  5. Combine and Serve

    Add the heart of palm to the skillet and sauté for another 2 minutes, stirring continuously. Pour in about ¼ cup of the reserved cooking water and turn off the heat. Taste before seasoning with salt and freshly ground black pepper. Stir in half of the basil leaves, sprinkle the toasted walnuts on top, and garnish with the remaining basil. Serve immediately, with an optional drizzle of extra olive oil for added flavor.
