Ingredients for Hearts of Palm and Leek Pie
    Ingredients
  • 150 grams cold butter, cut into cubes
  • a pinch salt
  • 1 unit egg
  • 1 cup plain yogurt
  • 1 tablespoon baking powder
  • 3 cups all-purpose flour, sifted
  • 1 unit egg, for brushing
  • to taste grated cheese
  • 1 jar hearts of palm
  • ½ cup sliced mushrooms or champignon
  • 2 units large leeks, sliced thin, white part only
  • to taste chopped parsley or cilantro
  • 2 units seedless and peeled tomatoes, chopped
  • 1 unit onion
  • 3 units garlic cloves, crushed
  • ½ cup milk
  • 2 tablespoons cornstarch
  • 1 cup creamy cheese spread

    Preparation
  1. Make the Filling

    First, prepare the filling so it can be used cold. Chop some of the hearts of palm and set aside some to cut into thicker slices, mixing them in at the end of the filling preparation. Fry the garlic in oil, sauté the onion and leeks, then add the tomatoes, chopped hearts of palm, mushrooms, salt, pepper, and seasonings. Cook well. Add the chopped parsley or cilantro. Mix the cornstarch diluted in milk and let it become creamy. Set aside.

  3. Prepare the Dough

    To make the dough, in a bowl, mix the butter, salt, egg, yogurt, and baking powder. Gradually add the sifted flour and knead well. Let the dough rest in the refrigerator for 20 minutes in a container covered with plastic wrap.

  5. Assembly and Baking

    Divide the dough into two parts. Roll out the first part and line a greased and floured baking dish, then add the filling. Cover with the remaining dough, brush with egg yolk, and sprinkle with grated cheese. Bake in a medium oven for 30 minutes or until golden brown.
