Ingredients for Mixed Vegetable Soup
    Main Ingredients
  • 1 cup Japanese pumpkin, peeled and diced
  • 1 unit Yam, diced
  • 1 unit Carrot, diced
  • 4 leaves Cabbage leaves
  • 1 unit Tomato, diced (peeled and seedless)
  • 1 unit Onion, diced
  • 2 cloves Garlic cloves
  • 1 tablespoon Grated ginger
  • 1 tablespoon Olive oil
  • 1 teaspoon Turmeric
  • 1 sprig Rosemary sprig
  • to taste Sea salt

  1. Make the Soup

    Sauté the onion and garlic in olive oil until golden. Add carrot, tomato, yam, pumpkin, and ginger. Sauté for a bit longer and then add water. Bring to a boil until the vegetables soften. Add the cabbage. Blend in a blender and return to the pot to thicken slightly. Add turmeric, rosemary, and salt. Done!
