Ingredients for Mushroom Ragu
    Main Ingredients
  • 1 unit Zucchini (Cooked)
  • 1 small Onion (About 30 grams)
  • 1 unit Carrot
  • 3.5 ounces Cremini Mushrooms (Approximately 100 grams)
  • 3.5 ounces Dried Shiitake Mushrooms (Approximately 100 grams)
  • 0.7 ounces Ginger (Approximately 20 grams)
  • to taste unit Fresh Rosemary (Chopped)
  • to taste unit Soy Sauce (Or tamari for gluten-free)
  • to taste unit Sesame Oil (For drizzling)
  • to taste unit Salt

    Cooking Steps
  1. Prepare the Mushrooms

    Soak the dried shiitake mushrooms in warm water for 20-30 minutes to rehydrate. Once softened, slice them.

  2. Chop the Vegetables

    Chop the zucchini, onion, and carrot into small pieces. Slice the cremini mushrooms.

  3. Cook the Vegetable Mixture

    In a pan, combine the zucchini, onion, carrot, cremini mushrooms, and rehydrated shiitake mushrooms. Grate or finely chop the ginger and add it to the pan along with some fresh rosemary.

  4. Simmer and Season

    Cook everything over low heat, stirring occasionally, until the vegetables are tender, about 10-15 minutes. Add soy sauce and salt to taste, cooking for an additional few minutes.

  5. Finish with Sesame Oil

    Drizzle a small amount of sesame oil over the ragu just before serving to enhance the flavor.
