Ingredients for Pineapple Cake

  • 230 grams canned pineapple slices
  • 0.84 cups rice milk
  • 4.5 teaspoons vegetable oil
  • 1 teaspoon baking powder
  • 4.5 teaspoons water
  • 1.5 cups concentrated pineapple juice
  • 3 cups rice flour
  • 100 grams non-dairy cream

  1. Mix and Bake

    In a bowl, mix the vegetable oil and water. Then add all ingredients except the baking powder and the pineapple slices, adding the baking powder last. Place the pineapple slices at the bottom of a greased pan with rice flour and non-dairy cream, and pour the batter on top. Bake in the oven at 400°F for about 30 minutes or until golden brown. Allow to cool, unmold, and serve. Note: Fresh pineapple can be used as long as it is pre-cooked with sugar.
