  1. Prepare the Dish

    In a clay pot, fry the pork ribs cut into small pieces with garlic and salt, stirring occasionally until well browned. Once browned, remove and set aside in the same pot. Check the amount of oil that has formed to avoid making the dish too greasy. Fry the bacon pieces, moving it to one side of the pot. Add the chopped bell pepper and onion, frying them a little until softened, then add the bacon and the washed rice. Stir with the set-aside pork ribs, adding enough hot water to cook. Stir occasionally to distribute the ribs evenly. Taste for salt. After cooking, sprinkle with plenty of chopped parsley. Serve with a well-dressed green salad.
