    Main Ingredients
  • 2.2 kilograms fresh pork trotters
  • 2.2 kilograms black-eyed peas (washed and sorted)
  • to taste unit cassava (for mashing)
  • to taste cloves garlic (crushed)
  • to taste unit salt
  • to taste unit onion (chopped)
  • to taste unit oil (for sautéing)
  • to taste unit green seasoning (for garnish)

  1. Prepare the Stew

    In a pressure cooker, sauté crushed garlic with salt, chopped onion, and oil. Sear the pork trotters. Cook under pressure.

    When they are almost cooked, add the previously sorted and washed black-eyed peas. Continue cooking until everything is tender.

    Separately, boil the cassava and mash it into a cream. Add this cream to the pork and black-eyed peas stew.

    Serve in a bowl and sprinkle with green seasoning.
