    Main Ingredients
  • 240 milliliters Water
  • 1 unit Leek
  • 1 tablespoon Olive oil
  • 70 grams Chopped onion
  • 2 units Grated carrot
  • 1 unit Garlic clove
  • 3 tablespoons Oat flour
  • 6 teaspoons Baking powder
  • 1 tablespoon Flaxseed (Ground for better absorption)
  • 2 units Chicken eggs
  • 1 unit Chopped tomato

    Preparation Steps
  1. Prepare the filling

    In a pan, sauté the garlic and onion in olive oil, add the leek and carrot, and stir until the onion turns golden. Season with salt and spices to taste.

  2. Make the batter

    In a blender, blend the water, olive oil, flaxseed, eggs, and salt, gradually adding the flour and finally the baking powder.

  3. Assemble the soufflé

    In a greased baking dish, place a little of the batter (just to cover the bottom), add the filling, and cover with the remaining batter.

  4. Bake

    Bake in a medium oven at 180°C for 30 minutes.
