Ingredients for Quinoa Balls
    Main Ingredients
  • 1 cup cooked cauliflower (lightly steamed)
  • 1 cup sauteed mushrooms (or chicken, chopped)
  • 1 cup cooked quinoa
  • to taste seasonings (onion, turmeric, parsley, pepper, red or yellow bell pepper)
  • 1 cup ricotta cheese (cubed, for stuffing)
  • 1 tbsp oregano (for flavor)

    Preparation
  1. Make the Mixture

    Blend the cooked cauliflower, sauteed mushrooms, and cooked quinoa in a food processor. Chill the mixture in the refrigerator until firm.

    Form the mixture into balls, stuffing each with a cube of ricotta cheese. Place on a baking tray and bake for 15 minutes at 180°C.
