Ingredients for Stuffed Baked Potatoes
  • 4 units medium Idaho potatoes
  • 2 tablespoons butter
  • 1 tablespoon mixed dried herbs (parsley, rosemary, chives, leeks, and basil)
  • to taste salt
  • 100 grams Roquefort cheese
  • 100 grams cream cheese
  • 100 grams Gorgonzola cheese
  • 200 grams shredded sun-dried beef (or shredded chicken)
Instructions
  1. Baking the Potatoes

    Preheat the oven to 400°F. Wash the potatoes well and poke several holes in the surface with a fork (do not peel the potatoes). In a bowl, combine the butter, salt, and dried herbs, and mix well. Spread this mixture on a piece of aluminum foil and wrap each potato so that the entire surface is covered with butter and herbs. Place them on a baking sheet and bake for 40 minutes or until tender.

    While the potatoes are baking, mash the cheeses in a bowl, mix with the cream cheese, and add the shredded sun-dried beef or shredded chicken.

    Once the potatoes are done, carefully unwrap each one (the aluminum foil will cool quickly, preventing burns), make a cut in the middle, and fill with the cheese and meat mixture (you can be generous with the filling). Wrap the potatoes again in aluminum foil and return to the oven for an additional 10 minutes.
