Preparation

  1. Preheat the oven

    Preheat the oven to 180°C (medium).

Filling the Eggplant

  1. Prep the eggplant

    Remove the pulp from the eggplant halves, chop it, and set aside. Brush the inside of the eggplant with olive oil and season with pink salt and white pepper.

Cooking the Shrimp

  1. Sauté shrimp

    Heat the remaining olive oil in a pan. Sauté the shrimp with basil and garlic for 1 minute until they turn pink. Add the reserved eggplant pulp and season with salt and pepper. Cook for an additional 5 minutes.

Bake the Dish

  1. Assemble and bake

    Mix the shrimp mixture with cream cheese. If too dry, add a bit of olive oil. Stuff this mixture into the eggplant halves and top with grated cheese. Bake for 30 to 40 minutes.
