Ingredients for Stuffed Eggplant
    Main Ingredients
  • 2 medium eggplants
  • 3 tablespoons olive oil
  • 4 cloves garlic (crushed)
  • to taste oregano
  • to taste salt
  • 1 small teaspoon vinegar
  • 1 cup chopped tomatoes
  • 1 cup onion (chopped)
  • 1 cup grated cheese (for topping)
  • 1 tablespoon green banana biomass (diluted and blended)
  • to taste basil
  • 1 cup protein (mushrooms or shredded chicken or ground meat) (sautéed with garlic)

    Preparation Steps
  1. Prepare the Eggplants

    Cut the eggplants lengthwise and soak them in water with vinegar and salt for 10 minutes. Then boil the eggplants for 5 minutes, remove the flesh, and place the eggplant shells in a baking dish for stuffing.

  2. Make the Filling
  3. Cook the Mixture

    Sauté olive oil, crushed garlic, oregano, salt, chopped eggplant flesh, tomatoes, and onion in a pan. Once cooked, add the diluted green banana biomass and mixed well, followed by minced basil and chosen protein. Stir to combine.

  4. Assemble and Bake
  5. Stuff the Eggplants

    Stuff the eggplant shells with the filling and sprinkle grated cheese on top along with a drizzle of olive oil. Bake in the oven for about 20 minutes or until the tops are slightly golden.
