Ingredients for Stuffed Zucchini
    Main Ingredients
  • 4 units medium zucchinis
  • 1 unit red onion, chopped
  • 2 cloves garlic, crushed
  • 300 grams ground meat or shredded chicken
  • 2 units Italian tomatoes, chopped
  • 50 grams grated Parmesan cheese (Do not use pre-grated cheese)
  • to taste fresh herbs (like parsley or cilantro)
  • to taste black pepper
  • to taste turmeric

    Preparation Steps
  1. Prepare the Zucchinis

    Cut the zucchinis in half lengthwise and carefully scoop out the flesh. Boil the zucchini halves briefly in salted water and then transfer them to a bowl of ice water to stop the cooking process.

  2. Make the Filling

    In a skillet, sauté the chopped onion and crushed garlic until fragrant. Add the ground meat (or shredded chicken) and season with black pepper and turmeric. Stir in the chopped tomatoes and reserved zucchini flesh, cooking until flavors meld.

  3. Stuff the Zucchini

    Fill the boiled zucchini halves with the prepared mixture. Top with grated Parmesan cheese and arrange them on a baking tray.

  4. Bake

    Bake in a preheated oven at 180°C for about 30 minutes or until the cheese is golden and bubbly.
