Ingredients for Summer Squash Puree
    Main Ingredients
  • 1 unit ripe squash
  • 2 cups milk
  • 250 grams margarine
  • 1 unit chicken or beef broth cube
  • to taste unit garlic
  • to taste unit pepper
  • to taste unit salt
  • 2 tablespoons all-purpose flour
  • to garnish unit mint leaves
  • to garnish unit herb mix

    Preparation Steps
  1. Make the Puree

    Peel the squash and cut it into large pieces. Cook in a small amount of water with a little salt until 'al dente'. Place the milk and squash in a blender and blend until it becomes a creamy mixture.

  2. Cook the Base

    Heat the margarine, fry the garlic and the broth cube without letting it darken. Add the cream and the flour dissolved in a little milk and let it cook for another 5 minutes.

  3. Serve

    Pour into a transparent dish and garnish with mint and herb mix. It can be served with fish, shrimp, stewed chicken, and meats.
