Prepare the Gnocchi
Peel and cook the sweet potatoes for 25 minutes. Once cooked, drain the water and mash them well while still hot and set aside. On a clean, smooth surface, place the puree and carefully add the other ingredients. Knead until you achieve a smooth, elastic dough. Divide into portions and roll each one into a rope of desired thickness. Cut into pieces of about 2 cm.

Cook the Gnocchi
In a pot, bring water to a boil, then gently add the gnocchi in batches. When they rise to the surface, they are cooked, which happens very quickly! Remove with a slotted spoon, let drain completely, and place them in a large dish to prevent sticking.

Serve with your desired sauce. For a simple ground beef sauce, sauté onion, garlic, and tomatoes, then add ground beef (chuck) and a bit of organic tomato sauce. Let it reduce, add salt, and it's ready.
