  1. Prepare the Gnocchi

    Peel and cook the sweet potatoes for 25 minutes. Once cooked, drain the water and mash them well while still hot and set aside. On a clean, smooth surface, place the puree and carefully add the other ingredients. Knead until you achieve a smooth, elastic dough. Divide into portions and roll each one into a rope of desired thickness. Cut into pieces of about 2 cm.
