  1. Cooking the Beef Tongue

    Clean the tongues and season with homemade seasoning, ½ teaspoon of salt, and 1 teaspoon of Spanish pepper. In a pressure cooker, sauté the tongue in 1 tablespoon of oil until golden brown. Add chopped onion and 1 liter of water. Close the pot and cook for 45 minutes. After cooking, slice the tongue as desired and reserve the broth.

Making the Sauce

  1. Preparing the Sauce

    In a pot, add the chopped onion, onion soup mix, roux sauce, and soy sauce and dissolve everything. Add the broth from the tongue and 3 cups of water. Bring to heat, add the sliced tongue and the beef bouillon. Once it starts to boil, add the wine. The point will be reached when the broth thickens. After reaching the desired consistency, add the champignon and chopped parsley on top. Serve with French bread and breaded cauliflower.
