Knead the tongue on a marble surface vigorously. Cook it until tender and peel it completely.

Sautéing and Simmering
In a pressure cooker, sauté the garlic and fry the tomato paste or sauce. Add salt, black pepper, white wine, two cups of water, and bay leaves and bring to a boil.

Finishing Touches
After about 20 minutes of boiling (enough for the tongue to be well cooked), turn off the heat and let the pot cool down. When it stops making noise, add the diced tomatoes, onion, and bell pepper. Let it simmer until you obtain a thick sauce, boiling a bit longer (with the lid off).
