Ingredients for Tuna Pancakes
    Pancake Ingredients
  • 1 cup Rice flour
  • 1 cup Lactose-free milk
  • 2 large Whole eggs
  • a pinch Pink salt
  • 1 tablespoon Olive oil
  • to taste Chopped onions
  • 1 Tomato, peeled and seeded
  • to taste Canned tuna, sautéed
  • 1 tablespoon Chopped green olives
  • to taste Black pepper
  • to taste Chopped parsley or cilantro
  • 200 grams Buffalo mozzarella, grated
Instructions
    Preparation and Cooking
  1. Blend and Cook Pancakes

    Blend all pancake ingredients in a blender. Grease a skillet and pour in the batter using a ladle. Cook on medium-high heat. Use a spatula to loosen the edges until you can flip the pancake. Repeat for the other side.

  2. Prepare the Filling

    For the filling, heat the olive oil in a pan and sauté the onions until translucent. Then add the remaining ingredients and sauté. Top with grated mozzarella and organic tomato sauce made from chopped tomatoes boiled with water and basil at the end.
