Make the crust
Preheat the oven to 350ºF. In a bowl, mix the eggs, olive oil, chickpea flour (or oat flour), whole milk (or almond milk), baking powder, and salt until well combined.

Prepare the filling
In a heated pan, sauté the onion and garlic, then add the tomatoes, tuna, sweet corn, hearts of palm, and olives. Let it cook for about 10 minutes.

Assemble the pie
In a baking dish, layer half of the crust mixture, followed by the filling, and cover with the remaining crust. If desired, sprinkle grated cheese on top.
