Ingredients for Upside-Down Banana Cake

  • 270 grams ripe bananas
  • 60 grams sunflower oil
  • 70 grams water
  • 90 grams brown sugar or sweetener
  • 200 grams rice flour
  • 100 grams almond flour or oats
  • to taste spices
  • 1 tablespoon baking powder
  • 90 grams demerara sugar

    Preparation Steps
  1. Make the Caramel and Batter

    Make the caramel directly in the baking pan and then place banana slices on top. For the batter, blend the mashed bananas with oil and water until smooth. Add the dry ingredients and mix well. Finally, add the baking powder. Pour the batter over the bananas in the pan. Bake in a preheated oven at 350°F for about 30 minutes. Unmold as soon as it comes out of the oven, before the caramel cools down. Finish with cinnamon and spices.
