  • 100 grams sunflower oil
  • 150 grams water
  • 270 grams demerara sugar or sweeteners mix
  • 150 grams rice flour
  • 75 grams potato starch
  • 1 pinch salt
  • 1 tablespoon baking powder
  • 100 grams melted chocolate
  • 100 grams coconut milk

  1. Prepare the Batter

    Blend the chopped carrots, sunflower oil, water, and sugar in a blender. Pour the mixture into a bowl and add the dry ingredients.

  2. Bake the Cake

    Pour into a greased and floured baking pan and bake in a preheated oven at 175°C for about 40 minutes.

  3. Prepare the Topping
