Ingredients for Vegetable Purée Tartare
  • 400 grams cooked carrots (diced into small cubes)
  • 200 grams cooked beets
  • 1 tablespoon Dijon mustard
  • 1 tablespoon nutritional yeast
  • to taste olive oil
  • optional pickles (chopped finely, works well with or without)
  • 1 teaspoon capers
  • to taste smoked paprika
  • to taste fine sea salt (or pink Himalayan salt)
  • to taste liquid smoke spray (available online or in specialty stores)
Instructions
  1. Prepare the Purée

    In a blender or food processor, combine the cooked carrots, beets, Dijon mustard, nutritional yeast, olive oil, capers, and optional pickles. Add smoked paprika, salt, and a spritz of liquid smoke spray. Blend until smooth, adjusting the seasoning to your taste as you go.

  2. Presentation

    Use a mold ring or small container to shape the purée into a tartar-like presentation. Serve with baby carrots, crackers, or as a topping for salads.
