Preparing the Cheese

  1. Blend and Cook

    Blend the water, sweet tapioca flour, sour tapioca flour, salt, oil, and mashed potato in a blender until smooth. Pour this mixture into a non-stick saucepan and, over high heat, stir continuously until it forms a firm dough that pulls away from the sides of the pan. This should take around 3 minutes or more. Remove the dough from the pan, shape it as desired, and return to low heat to brown the sides. Refrigerate for 24 hours before serving.

    Tip: It can be frozen, and if you want to use it as grated cheese, take it out of the freezer a little before using and grate. It can also be used as a filling for pastries or in sandwiches.
